This week’s Cornish Times recipe of the week is a taste of the Caribbean from popular television celebrity chef Ainsley Harriott.

He says his recipe for Butter Rum Cake is perfect for those with a sweet tooth and is based on one that was made for him when on a visit to the West Indies islands, and which he felt he just had to recreate when he got home.

Ideally the recipe requires a packet of instant vanilla pudding, a popular item in the Caribbean, but if that is hard to obtain, instant custard powder and instant dessert mix such as Angel Delight can be used instead.

Ainsley says it is quite possibly the best butter run cake ever, so find the recipe to this tasty treat in this week’s Cornish Times, in shops from today (Friday).
